Ingredients

  • 2 medium-sized zucchini
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup cooked quinoa
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh basil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon ground black pepper
  • 3/4 cup grated Parmesan cheese

Directions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the zucchini in half lengthwise and scoop out the insides, leaving a 1/4-inch (6-millimeter) thick shell.
  3. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook for 5 minutes, or until the onion is soft and translucent.
  4. Add the quinoa, parsley, basil, oregano, thyme, and black pepper to the skillet and cook for an additional 5 minutes.
  5. Remove the skillet from the heat and add the Parmesan cheese, stirring to combine.
  6. Spoon the stuffing into the zucchini shells and place them in a baking dish.
  7. Bake the zucchini for 25 minutes, or until the cheese is melted and the zucchini is tender.
