Ingredients
2 medium-sized zucchini
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
1 cup cooked quinoa

Directions
Preheat the oven to 375°F (190°C).
Cut the zucchini in half lengthwise and scoop out the insides, leaving a 1/4-inch (6-millimeter) thick shell.
Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook for 5 minutes, or until the onion is soft and translucent.
Add the quinoa, parsley, basil, oregano, thyme, and black pepper to the skillet and cook for an additional 5 minutes.
Remove the skillet from the heat and add the Parmesan cheese, stirring to combine.
Spoon the stuffing into the zucchini shells and place them in a baking dish.
Bake the zucchini for 25 minutes, or until the cheese is melted and the zucchini is tender.
