Ingredients

  • 1 lb. chicken, cut into 1-inch cubes
  • 1 can coconut milk
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1 teaspoon paprika
  • 1 teaspoon ground coriander
  • 1 teaspoon ground ginger
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Directions

  1. In a large pot, heat 2 tablespoons of oil over medium heat. Add the chicken and cook for 8-10 minutes, stirring occasionally, until browned.
  2. Add the onion, garlic, curry powder, cumin, turmeric, paprika, coriander, ginger, salt, and pepper. Cook for 3-4 minutes, stirring occasionally, until the onion is softened.
  3. Stir in the coconut milk and bring to a simmer. Reduce the heat to low and simmer for 20-25 minutes, stirring occasionally, until the chicken is cooked through and the sauce has thickened.
  4. Serve over rice with your favorite accompaniments.
