Ingredients

  • 1/2 cup (125 mL) butter, softened
  • 3/4 cup (175 mL) granulated sugar
  • 1 large egg
  • 1 teaspoon (5 mL) pure vanilla extract
  • 2 1/2 cups (625 mL) all-purpose flour
  • 1/2 teaspoon (2.5 mL) baking powder
  • 1/4 teaspoon (1.25 mL) salt

Directions

  1. Preheat oven to 375 F (190 C). Line two baking sheets with parchment paper.
  2. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg and vanilla.
  3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, stirring until well blended.
  4. Roll the dough into 1-inch (2.5 cm) balls and place them 2 inches (5 cm) apart on the prepared baking sheets. Flatten the dough balls slightly with the back of a spoon.
  5. Bake in preheated oven for 10-12 minutes, or until lightly golden. Transfer to a wire rack to cool completely.
