Ingredients
4 potatoes, peeled and cut into wedges
1 onion, chopped
2 cloves garlic, minced
1/4 teaspoon dried thyme
2 tablespoons olive oil
1/4 cup honey

Directions
Preheat oven to 425 degrees F.
In a large bowl, combine potatoes, onion, garlic, thyme, and olive oil. Spread the potato mixture onto a baking sheet and bake for 20 minutes.
In a small saucepan over medium heat, combine honey, balsamic vinegar, and vegetable broth. Simmer for 5 minutes until the sauce thickens.
Add the mushrooms to the baking sheet with the potatoes and pour the honey sauce over the top. Stir to combine and bake for an additional 10 minutes.
Serve warm and enjoy!
