Ingredients

  • 1 head of cabbage, chopped
  • 2 carrots, diced
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon of oregano
  • 1 teaspoon of thyme
  • 1 teaspoon of basil
  • Salt and pepper, to taste
  • 4 cups of vegetable broth

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onions and garlic and sauté for 5 minutes, stirring occasionally.
  3. Add the carrots and cabbage and sauté for another 5 minutes.
  4. Add the oregano, thyme, basil, salt, and pepper and stir to combine.
  5. Pour in the vegetable broth and bring to a boil.
  6. Reduce the heat and simmer for 15 minutes.
  7. Serve hot.
