Ingredients

  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 5 tablespoons cocoa powder
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 2 cups graham cracker crumbs
  • 1 cup shredded coconut
  • 1/2 cup chopped walnuts
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 tablespoons vanilla custard powder
  • 2 tablespoons milk
  • 4 ounces semisweet chocolate, chopped
  • 2 tablespoons unsalted butter

Directions

  1. In a medium-sized bowl, combine the melted butter, granulated sugar, cocoa powder, beaten egg, and vanilla extract. Mix well.
  2. Add the graham cracker crumbs, shredded coconut, and chopped walnuts to the bowl. Stir until all the ingredients are well combined.
  3. Press the mixture firmly into the bottom of a greased 9x9-inch baking dish. Set aside.
  4. In another bowl, cream together the softened butter, powdered sugar, vanilla custard powder, and milk until smooth and creamy.
  5. Spread the custard filling evenly over the graham cracker crust in the baking dish.
  6. In a small microwavable bowl, combine the chopped semisweet chocolate and unsalted butter. Microwave in 30-second intervals, stirring in between, until the chocolate is melted and smooth.
  7. Pour the melted chocolate over the custard layer in the baking dish, spreading it out to cover the entire surface.
  8. Refrigerate the bars for at least 2 hours, or until the chocolate topping is set and the bars are firm.
