Ingredients

  • 4 boneless, skinless chicken breast cutlets
  • Salt and pepper to taste
  • 1 cup all-purpose flour
  • 3 large eggs
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 2 tablespoons chopped fresh parsley

Directions

  1. Season the chicken cutlets with salt and pepper on both sides.
  2. Place the flour in a shallow dish and lightly beat the eggs in another shallow dish.
  3. Dip each chicken cutlet into the flour, shaking off any excess.

  8. Remove the cooked cutlets from the skillet and set aside.
  9. In the same skillet, add the chicken broth and lemon juice.
  10. Bring the mixture to a simmer and cook for 2-3 minutes to reduce slightly.
  11. Stir in the remaining 2 tablespoons of butter until melted.
