- 4 boneless, skinless chicken breast cutlets
- Salt and pepper to taste
- 1 cup all-purpose flour
- 3 large eggs
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice
- 2 tablespoons chopped fresh parsley

- Season the chicken cutlets with salt and pepper on both sides.
- Place the flour in a shallow dish and lightly beat the eggs in another shallow dish.
- Dip each chicken cutlet into the flour, shaking off any excess.
