Ingredients

  • 1 cup frozen, shredded summer squash
  • 2 eggs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 cup melted butter

Directions

  1. Preheat oven to 375 degrees F.
  2. In a medium bowl, combine squash, eggs, Parmesan cheese, flour, baking powder, garlic powder, and salt. Mix until everything is combined.
  3. Stir in melted butter until mixture is smooth.
  4. Using a spoon or a cookie scoop, drop mounds of the mixture onto a greased baking sheet.
  5. Bake for 15-20 minutes, or until puffs are golden brown.
  6. Remove from oven and let cool before serving.
