Ingredients

  • 1 (4-5 lb) prime rib roast
  • 2 tablespoons kosher salt
  • 2 tablespoons freshly cracked black pepper
  • 2 tablespoons garlic powder
  • 2 tablespoons smoked paprika
  • 1/2 cup maple syrup
  • 1/4 cup Dijon mustard
  • 2 tablespoons Worcestershire sauce

Directions

  1. Preheat your smoker to 250°F.
  2. Pat the prime rib roast dry with paper towels and season liberally with the salt, pepper, garlic powder, and smoked paprika.
  3. Place the roast in the smoker and cook for 1 1/2 to 2 hours, or until the internal temperature reaches 125°F.
  4. In a small bowl, whisk together the maple syrup, mustard, and Worcestershire sauce.
  5. Brush the maple syrup mixture over the roast and continue to cook for an additional 30 minutes, or until the internal temperature reaches 135°F.
  6. Remove the roast from the smoker and let rest for 10 minutes before slicing and serving.
