- 1 (4-5 lb) prime rib roast
- 2 tablespoons kosher salt
- 2 tablespoons freshly cracked black pepper
- 2 tablespoons garlic powder
- 2 tablespoons smoked paprika
- 1/2 cup maple syrup
- 1/4 cup Dijon mustard
- 2 tablespoons Worcestershire sauce
Directions
- Preheat your smoker to 250°F.
- Pat the prime rib roast dry with paper towels and season liberally with the salt, pepper, garlic powder, and smoked paprika.
- Place the roast in the smoker and cook for 1 1/2 to 2 hours, or until the internal temperature reaches 125°F.
- In a small bowl, whisk together the maple syrup, mustard, and Worcestershire sauce.
- Brush the maple syrup mixture over the roast and continue to cook for an additional 30 minutes, or until the internal temperature reaches 135°F.
- Remove the roast from the smoker and let rest for 10 minutes before slicing and serving.
