Ingredients
- 1 pound ground beef
- 1 small onion, diced
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (10 ounce) can enchilada sauce
- 10 (6-inch) flour tortillas
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup sliced black olives (optional)
Directions
- Preheat oven to 350 degrees F (175 degrees C).
- In a large skillet over medium heat, cook the ground beef and onion until the beef is no longer pink. Drain any excess fat.
- Stir in the garlic powder, chili powder, cumin, salt, and pepper. Cook for 1 minute.
- Spread 1/4 cup of enchilada sauce in the bottom of a 9x13 inch baking dish.
- Spoon a heaping tablespoon of the beef mixture into each tortilla. Roll the tortillas and place them seam side down in the baking dish.
- Pour the remaining enchilada sauce over the top of the tortillas.
- Bake for 25 minutes.
- Mix together the cheese and sour cream. Remove the enchiladas from the oven and spread the cheese mixture over the top.
- Return to the oven and bake for 10 minutes.
- Garnish with olives, if desired. Enjoy!
