Creamy Beef Enchiladas

Ingredients

  • 1 pound ground beef
  • 1 small onion, diced
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (10 ounce) can enchilada sauce
  • 10 (6-inch) flour tortillas
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup sliced black olives (optional)

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large skillet over medium heat, cook the ground beef and onion until the beef is no longer pink. Drain any excess fat.
  3. Stir in the garlic powder, chili powder, cumin, salt, and pepper. Cook for 1 minute.
  4. Spread 1/4 cup of enchilada sauce in the bottom of a 9x13 inch baking dish.
  5. Spoon a heaping tablespoon of the beef mixture into each tortilla. Roll the tortillas and place them seam side down in the baking dish.
  6. Pour the remaining enchilada sauce over the top of the tortillas.
  7. Bake for 25 minutes.
  8. Mix together the cheese and sour cream. Remove the enchiladas from the oven and spread the cheese mixture over the top.
  9. Return to the oven and bake for 10 minutes.
  10. Garnish with olives, if desired. Enjoy!
