Ingredients

  • 3 cups arugula
  • 1/2 burrata cheese
  • 2 large tomatoes, sliced
  • 1 large cucumber, sliced
  • 1 nectarine, sliced
  • 2 tablespoons olive oil
  • 2 tablespoons white balsamic vinegar
  • 1 teaspoon honey
  • Salt and pepper to taste
  • Fresh basil, for garnish
  • Fresh mint, for garnish

Directions

  1. In a large bowl, combine the arugula, burrata, tomatoes, cucumber and nectarine.
  2. In a separate bowl, whisk together the olive oil, white balsamic vinegar and honey. Season with salt and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Garnish with the fresh basil and mint.
  5. Serve immediately.
