Ingredients
- 3 cups arugula
- 1/2 burrata cheese
- 2 large tomatoes, sliced
- 1 large cucumber, sliced
- 1 nectarine, sliced
- 2 tablespoons olive oil
- 2 tablespoons white balsamic vinegar
- 1 teaspoon honey
- Salt and pepper to taste
- Fresh basil, for garnish
- Fresh mint, for garnish
Directions
- In a large bowl, combine the arugula, burrata, tomatoes, cucumber and nectarine.
- In a separate bowl, whisk together the olive oil, white balsamic vinegar and honey. Season with salt and pepper.
- Pour the dressing over the salad and toss to combine.
- Garnish with the fresh basil and mint.
- Serve immediately.
