Ingredients

  • 1 15 oz can pumpkin puree
  • 1/2 cup coconut sugar
  • 1 teaspoon stevia
  • 3 large eggs
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1 9-inch deep dish pie crust

Directions

  1. Preheat oven to 350°F.
  2. In a medium bowl, combine pumpkin puree, coconut sugar, stevia, eggs, nutmeg, cinnamon, allspice, ginger, salt, and vanilla extract. Mix until combined.
  3. Pour mixture into the pie crust and place in preheated oven.
  4. Bake for 40-45 minutes, or until a knife inserted into the center comes out clean.
  5. Remove from oven and let cool before serving.
