Ingredients
1 tablespoon olive oil
1 large onion, chopped
2 cloves garlic, minced
1 green bell pepper, chopped
1 red bell pepper, chopped

Directions
Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until the onion is softened, about 5 minutes.
Add the bell peppers and cook until soft, about 5 minutes.
Stir in the oregano, basil, thyme, and red pepper flakes and cook for 1 minute.
Stir in the crushed tomatoes, tomato sauce, cooked rice, and beef broth. Bring to a boil, reduce the heat, and simmer for 30 minutes.
Season with salt and pepper. Stir in the parsley and serve.
