Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 1 1/2 cups cooked white rice
  • 2 cups beef broth
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley

Directions

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until the onion is softened, about 5 minutes.
  2. Add the bell peppers and cook until soft, about 5 minutes.
  3. Stir in the oregano, basil, thyme, and red pepper flakes and cook for 1 minute.
  4. Stir in the crushed tomatoes, tomato sauce, cooked rice, and beef broth. Bring to a boil, reduce the heat, and simmer for 30 minutes.
  5. Season with salt and pepper. Stir in the parsley and serve.
