Ingredients

  • 1 cup long-grain white rice
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 2 cups vegetable broth
  • 1 cup diced carrots
  • 1 cup diced bell pepper
  • 1 cup frozen peas
  • 1/4 cup chopped fresh parsley

Directions

  1. In a large saucepan, heat the olive oil over medium heat.
  2. Add the onion and sauté until softened, about 5 minutes.
  3. Add the garlic, cumin, coriander, paprika, turmeric, cinnamon, cayenne pepper, ginger, and salt. Cook for 1 minute.
  4. Add the rice and stir to coat. Cook for 1 minute.
  5. Add the broth and bring to a boil. Reduce heat to low and simmer, covered, for 15 minutes.
  6. Add the carrots, bell peppers, and peas. Cover and cook for 5 minutes more.
  7. Remove from the heat and stir in the parsley. Serve hot.
