Ingredients
- 1 cup long-grain white rice
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon ground ginger
- 1/2 teaspoon salt
- 2 cups vegetable broth
- 1 cup diced carrots
- 1 cup diced bell pepper
- 1 cup frozen peas
- 1/4 cup chopped fresh parsley
Directions
- In a large saucepan, heat the olive oil over medium heat.
- Add the onion and sauté until softened, about 5 minutes.
- Add the garlic, cumin, coriander, paprika, turmeric, cinnamon, cayenne pepper, ginger, and salt. Cook for 1 minute.
- Add the rice and stir to coat. Cook for 1 minute.
- Add the broth and bring to a boil. Reduce heat to low and simmer, covered, for 15 minutes.
- Add the carrots, bell peppers, and peas. Cover and cook for 5 minutes more.
- Remove from the heat and stir in the parsley. Serve hot.
