Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 pounds beef stew meat, cubed
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground oregano
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 8 cups beef broth
  • 2 potatoes, peeled and cubed
  • 2 carrots, peeled and diced
  • 1/4 cup chopped fresh cilantro

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic and cook until the onion is tender, about 5 minutes.
  3. Add the beef and cook until browned, about 5 minutes.
  4. Stir in the cumin, coriander, oregano, chili powder, garlic powder, salt, and pepper.
  5. Pour in the beef broth and bring to a boil.
  6. Add the potatoes and carrots and return to a boil.
  7. Reduce heat to low and simmer, uncovered, for 1 hour.
  8. Stir in the cilantro and simmer for an additional 15 minutes.
  9. Serve hot.
