Ingredients
- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 pounds beef stew meat, cubed
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground oregano
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 8 cups beef broth
- 2 potatoes, peeled and cubed
- 2 carrots, peeled and diced
- 1/4 cup chopped fresh cilantro
Directions
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and cook until the onion is tender, about 5 minutes.
- Add the beef and cook until browned, about 5 minutes.
- Stir in the cumin, coriander, oregano, chili powder, garlic powder, salt, and pepper.
- Pour in the beef broth and bring to a boil.
- Add the potatoes and carrots and return to a boil.
- Reduce heat to low and simmer, uncovered, for 1 hour.
- Stir in the cilantro and simmer for an additional 15 minutes.
- Serve hot.
