Ingredients
2 tablespoons olive oil
1 medium onion, diced
2 cloves garlic, minced
2 pounds beef stew meat, cubed
2 teaspoons ground cumin
1 teaspoon ground coriander
1 teaspoon ground oregano
1 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon ground black pepper
8 cups beef broth
2 potatoes, peeled and cubed
2 carrots, peeled and diced
1/4 cup chopped fresh cilantro
Directions
Heat the olive oil in a large pot over medium heat.
Add the onion and garlic and cook until the onion is tender, about 5 minutes.
Add the beef and cook until browned, about 5 minutes.
Stir in the cumin, coriander, oregano, chili powder, garlic powder, salt, and pepper.
Pour in the beef broth and bring to a boil.
Add the potatoes and carrots and return to a boil.
Reduce heat to low and simmer, uncovered, for 1 hour.
Stir in the cilantro and simmer for an additional 15 minutes.
Serve hot.
