Ingredients
4 boneless, skinless chicken breasts
4 strips of bacon
2 cloves of garlic, minced
1 cup of feta cheese
1 teaspoon of dried oregano
Salt and pepper, to taste
4 tablespoons of olive oil
2 large onions, finely diced
1/4 cup of butter
4 cups of chicken broth
4 cups of mashed potatoes
Directions
Preheat the oven to 375°F.
In a medium bowl, combine the bacon, garlic, feta cheese, oregano, salt, and pepper. Mix until the ingredients are evenly distributed.
Take each chicken breast and stuff it with the feta and bacon mixture.
Heat the olive oil in a large skillet over medium heat. Add the stuffed chicken breasts and cook for 5 minutes per side, or until golden brown.
Transfer the chicken to a baking dish and bake in the preheated oven for 25 minutes, or until the internal temperature reaches 165°F.
While the chicken is baking, heat the butter in a large saucepan over medium heat. Add the onions and cook for 5 minutes, stirring occasionally.
Add the chicken broth and bring to a boil. Reduce heat to low and simmer for 10 minutes.
Add the mashed potatoes and stir to combine. Cook for an additional 5 minutes.
Remove the chicken from the oven and serve with the onion mashed potatoes. Enjoy!
