Ingredients

  • 1 package of rice paper wrappers
  • 1/2 lb. shrimp, cooked and peeled
  • 1/2 cup cooked pork, thinly sliced
  • 1/2 cup cooked chicken, shredded
  • 1/2 cup cooked pork, thinly sliced
  • 1/2 cup cooked pork, thinly sliced
  • 1/2 cup cooked pork, thinly sliced
  • 1/2 cup cooked pork, thinly sliced
  • 1/2 cup cooked pork, thinly sliced
  • 3 cups shredded lettuce
  • 3/4 cup fresh mint leaves
  • 3/4 cup fresh cilantro leaves
  • 1/2 cup fresh basil leaves
  • 1/2 cup chopped peanuts
  • 1/4 cup hoisin sauce
  • 1/2 cup nuoc mam (Vietnamese fish sauce)

Directions

  1. Soak the rice paper wrappers in a large bowl of warm water for about 30 seconds or until soft.
  2. Lay the wrapper flat on a cutting board or plate.
  3. Place the shrimp, pork, chicken, lettuce, mint, cilantro, basil, and peanuts in the center of the wrapper.
  4. Fold the bottom half of the wrapper over the filling and tuck the sides in.
  5. Continue to roll the wrapper until it is completely sealed.
  6. Repeat with the remaining wrappers.
  7. Serve with hoisin sauce and nuoc mam.
