Ingredients
2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
4 cups chicken broth
1/2 teaspoon dried thyme
Salt and black pepper, to taste
2 cups diced cooked chicken
2 cups shredded cheddar cheese
2 tablespoons chopped fresh parsley
Directions
In a large pot over medium heat, heat the olive oil. Add the onion and garlic and cook until softened, about 5 minutes.
Add the chicken broth, thyme, salt, and pepper and bring to a boil. Reduce heat to low and simmer for 10 minutes.
Add the chicken and simmer for 5 minutes.
Stir in the cheddar cheese until melted.
Garnish with parsley and serve.
