Texas Wild Pork Roast for Two

Ingredients

  • 2 lbs. boneless wild pork roast
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup chicken stock

Directions

  1. Preheat oven to 350°F.
  2. In a small bowl, combine all spices and mix well.
  3. In a large skillet over medium-high heat, add olive oil. Once oil is hot, add pork roast and sear on all sides until golden brown.
  4. Remove pork roast from skillet and place in a roasting pan. Rub spice mix all over roast.
  5. Pour chicken stock into roasting pan. Cover pan with foil and place in preheated oven.
  6. Roast for 1 hour and 15 minutes or until pork is cooked through and tender.
  7. Remove from oven and let rest for 10 minutes before slicing and serving.
