Ingredients

  • 4 large patty pan squash
  • 1/4 cup olive oil
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped fresh herbs (thyme, oregano, marjoram, and/or basil)
  • Salt and pepper to taste

Directions

  1. Preheat the oven to 350°F.
  2. Cut the squash in half lengthwise and scoop out the seeds.
  3. Brush the squash with olive oil and sprinkle with salt and pepper.
  4. Place the squash, cut-side down, on a baking sheet and bake for 15 minutes.
  5. Meanwhile, in a small bowl, mix together the Parmesan, breadcrumbs, herbs, and salt and pepper to taste.
  6. Remove the squash from the oven and turn over. Fill the cavities with the Parmesan mixture.
  7. Return to the oven and bake for an additional 15 minutes, or until the squash is tender and the filling is golden brown.
  8. Serve warm.
