Ingredients
- 4 large patty pan squash
- 1/4 cup olive oil
- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs
- 1/4 cup chopped fresh herbs (thyme, oregano, marjoram, and/or basil)
- Salt and pepper to taste
Directions
- Preheat the oven to 350°F.
- Cut the squash in half lengthwise and scoop out the seeds.
- Brush the squash with olive oil and sprinkle with salt and pepper.
- Place the squash, cut-side down, on a baking sheet and bake for 15 minutes.
- Meanwhile, in a small bowl, mix together the Parmesan, breadcrumbs, herbs, and salt and pepper to taste.
- Remove the squash from the oven and turn over. Fill the cavities with the Parmesan mixture.
- Return to the oven and bake for an additional 15 minutes, or until the squash is tender and the filling is golden brown.
- Serve warm.
