Ingredients
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 pound chicken breasts, cubed
- 2 tablespoons cumin
- 1 teaspoon salt
- 1 teaspoon black pepper
- 4 cups chicken broth
- 1 (4-ounce) can diced green chiles
- 1 (15-ounce) can black beans, drained and rinsed
- 1 (14-ounce) can diced tomatoes
Directions
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and cook until softened, about 5 minutes.
- Add the chicken, cumin, salt, and pepper and cook until the chicken is cooked through, about 10 minutes.
- Add the chicken broth, green chiles, black beans, and tomatoes and bring to a boil.
- Reduce the heat to low, cover, and simmer for 20 minutes.
- Serve warm.
