Hidden Veggie Marinara Sauce for Kids

Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1 carrot, diced
  • 1 (28-ounce) can crushed tomatoes
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 1/4 cup fresh basil, chopped

Directions

  1. Heat olive oil in a large saucepan over medium-high heat. Add onion and garlic and sauté until softened, about 2 minutes.
  2. Add bell pepper, zucchini, and carrot and sauté for another 2 minutes.
  3. Add crushed tomatoes and Italian seasoning and season with salt and pepper to taste.
  4. Bring to a boil, reduce heat to low, and let simmer for 20 minutes, stirring occasionally.
  5. Stir in fresh basil and let simmer for another 5 minutes.
  6. Serve over your favorite pasta and enjoy!
