Ingredients
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 carrot, diced
- 1 (28-ounce) can crushed tomatoes
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- 1/4 cup fresh basil, chopped
Directions
- Heat olive oil in a large saucepan over medium-high heat. Add onion and garlic and sauté until softened, about 2 minutes.
- Add bell pepper, zucchini, and carrot and sauté for another 2 minutes.
- Add crushed tomatoes and Italian seasoning and season with salt and pepper to taste.
- Bring to a boil, reduce heat to low, and let simmer for 20 minutes, stirring occasionally.
- Stir in fresh basil and let simmer for another 5 minutes.
- Serve over your favorite pasta and enjoy!
