- 1 pint fresh strawberries, hulled and diced
- 1 cup sugar
- 1/2 cup water
- 1/4 cup fresh lemon juice
- 1/2 cup mascarpone cheese
- 2 cups heavy cream
- 1 teaspoon vanilla extract
Directions
- In a medium saucepan, combine the diced strawberries, sugar, water, and lemon juice. Heat over medium heat, stirring occasionally, for about 5 minutes, or until the strawberries are softened and the liquid is slightly thickened.
- Remove from heat and let cool for about 10 minutes.
- In a large bowl, combine the mascarpone cheese, heavy cream, and vanilla extract. Beat with a hand mixer on medium speed for about 3 minutes, or until the mixture is light and fluffy.
- Stir in the cooled strawberry mixture until well combined.
- Transfer the mixture to an ice cream maker and freeze according to the manufacturer’s instructions.
- Once the gelato is finished freezing, transfer to an airtight container and freeze until ready to serve.
