Ingredients

  • 1 pound dried split peas, rinsed and picked over
  • 1 large onion, diced
  • 2 carrots, peeled and diced
  • 2 stalks celery, diced
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 2 cups water
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 cup chopped fresh parsley

Directions

  1. In a large soup pot, combine the split peas, onion, carrots, celery, and garlic.
  2. Add the broth, water, bay leaves, thyme, oregano, salt, and pepper. Stir to combine.
  3. Bring the soup to a boil, reduce the heat, and simmer, covered, for 1 hour, stirring occasionally.
  4. Add the parsley and simmer for an additional 30 minutes, or until the split peas are tender.
  5. Remove the bay leaves and serve hot.
