Ingredients
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
- ¼ cup butter, softened
- 1 cup granulated sugar
- 2 eggs
- 2 tablespoons tequila
- 2 tablespoons lime juice
- 2 tablespoons lime zest
- ¼ cup sour cream
- 1 cup fresh strawberries, diced
- 1 cup powdered sugar
Directions
- Preheat oven to 350°F (175°C). Grease and flour an 8-inch round baking pan.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time.
- Mix in the tequila, lime juice, lime zest, and sour cream. Gradually stir in the flour mixture until just combined.
- Fold in the diced strawberries. Spread the batter into the prepared pan.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool completely before frosting.
- In a medium bowl, mix together the powdered sugar and enough tequila to make a thick glaze. Spread the glaze over the cooled cake. Enjoy!
