Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ¼ cup butter, softened
  • 1 cup granulated sugar
  • 2 eggs
  • 2 tablespoons tequila
  • 2 tablespoons lime juice
  • 2 tablespoons lime zest
  • ¼ cup sour cream
  • 1 cup fresh strawberries, diced
  • 1 cup powdered sugar

Directions

  1. Preheat oven to 350°F (175°C). Grease and flour an 8-inch round baking pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time.
  4. Mix in the tequila, lime juice, lime zest, and sour cream. Gradually stir in the flour mixture until just combined.
  5. Fold in the diced strawberries. Spread the batter into the prepared pan.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool completely before frosting.
  8. In a medium bowl, mix together the powdered sugar and enough tequila to make a thick glaze. Spread the glaze over the cooled cake. Enjoy!
