Ingredients
- 2 ripe bananas
- 1/2 cup coconut oil, melted
- 1/2 cup coconut sugar
- 2 eggs
- 1 teaspoon pure vanilla extract
- 1 1/2 cups gluten-free oat flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon sea salt
- 1/2 cup dark chocolate chips
Directions
- Preheat the oven to 350 F and grease a 9x5 inch loaf pan with coconut oil.
- In a medium bowl, mash the bananas with a fork.
- Add the melted coconut oil, coconut sugar, eggs, and vanilla extract to the mashed bananas and mix well.
- In a separate medium bowl, combine the oat flour, baking powder, baking soda, cinnamon, and sea salt.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Fold in the dark chocolate chips.
- Pour the batter into the greased loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for 10 minutes before transferring to a cooling rack to cool completely.
