Ingredients

  • 2 ripe bananas
  • 1/2 cup coconut oil, melted
  • 1/2 cup coconut sugar
  • 2 eggs
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups gluten-free oat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon sea salt
  • 1/2 cup dark chocolate chips

Directions

  1. Preheat the oven to 350 F and grease a 9x5 inch loaf pan with coconut oil.
  2. In a medium bowl, mash the bananas with a fork.
  3. Add the melted coconut oil, coconut sugar, eggs, and vanilla extract to the mashed bananas and mix well.
  4. In a separate medium bowl, combine the oat flour, baking powder, baking soda, cinnamon, and sea salt.
  5. Add the wet ingredients to the dry ingredients and mix until just combined.
  6. Fold in the dark chocolate chips.
  7. Pour the batter into the greased loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool in the pan for 10 minutes before transferring to a cooling rack to cool completely.
