Ingredients
1 cup pureed cooked squash
3/4 cup granulated sugar
1/4 cup vegetable oil
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1/3 cup butter, softened
2 tablespoons ground cinnamon
1/2 cup packed brown sugar
1/4 cup chopped nuts (optional)
Directions
Preheat oven to 375°F.
In a medium bowl, mix together squash, sugar, oil, and vanilla.
In a large bowl, mix together flour, baking powder, cinnamon, nutmeg, and salt.
Mix the squash mixture into the flour mixture until combined.
Turn the dough out onto a lightly floured surface and knead for a few minutes until the dough is soft and pliable.
Roll the dough out into a 12x14-inch rectangle.
Spread the softened butter over the dough, then sprinkle with cinnamon and brown sugar.
Sprinkle with chopped nuts, if desired.
Roll the dough up into a log shape, starting from the long end.
Cut the log into 12-14 slices and place on a lightly greased baking sheet.
Bake for 20-25 minutes, or until golden brown.
Let cool before serving.
