Ingredients

  • 1 cup pureed cooked squash
  • 3/4 cup granulated sugar
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/3 cup butter, softened
  • 2 tablespoons ground cinnamon
  • 1/2 cup packed brown sugar
  • 1/4 cup chopped nuts (optional)

Directions

  1. Preheat oven to 375°F.
  2. In a medium bowl, mix together squash, sugar, oil, and vanilla.
  3. In a large bowl, mix together flour, baking powder, cinnamon, nutmeg, and salt.
  4. Mix the squash mixture into the flour mixture until combined.
  5. Turn the dough out onto a lightly floured surface and knead for a few minutes until the dough is soft and pliable.
  6. Roll the dough out into a 12x14-inch rectangle.
  7. Spread the softened butter over the dough, then sprinkle with cinnamon and brown sugar.
  8. Sprinkle with chopped nuts, if desired.
  9. Roll the dough up into a log shape, starting from the long end.
  10. Cut the log into 12-14 slices and place on a lightly greased baking sheet.
  11. Bake for 20-25 minutes, or until golden brown.
  12. Let cool before serving.
