Ingredients
2 pounds of Yukon gold potatoes, peeled and grated
1/2 cup of all-purpose flour
1 teaspoon of baking powder
1 teaspoon of sea salt

Directions

Transfer the latkes to a paper towel-lined plate to drain.
In the same skillet, add the red onion and pears and sauté until lightly caramelized, about 4 minutes.
Add the sherry vinegar and cook for 1 minute longer.
To assemble the latkes, top each one with a spoonful of the caramelized pears and onions, crumbled goat cheese, and parsley.
Drizzle with sherry vinegar and serve warm.
