Ingredients

  • 2 pounds of Yukon gold potatoes, peeled and grated
  • 1/2 cup of all-purpose flour
  • 1 teaspoon of baking powder
  • 1 teaspoon of sea salt
  • 1/2 teaspoon of freshly ground black pepper
  • 2 large eggs, lightly beaten
  • 1/4 cup of olive oil, plus more for frying
  • 1/2 cup of diced red onion
  • 1/2 cup of diced pears
  • 2 tablespoons of sherry vinegar
  • 4 ounces of goat cheese, crumbled
  • 1/4 cup of chopped fresh parsley

Directions

  1. In a large bowl, combine the grated potatoes, flour, baking powder, salt, and pepper.
  2. Add the eggs and mix until everything is well combined.
  3. In a large skillet, heat the olive oil over medium-high heat.
  4. Add the potato mixture in batches and cook until golden brown and crisped, about 3 minutes per side.
  5. Transfer the latkes to a paper towel-lined plate to drain.
  6. In the same skillet, add the red onion and pears and sauté until lightly caramelized, about 4 minutes.
  7. Add the sherry vinegar and cook for 1 minute longer.
  8. To assemble the latkes, top each one with a spoonful of the caramelized pears and onions, crumbled goat cheese, and parsley.
  9. Drizzle with sherry vinegar and serve warm.
