Mussels in Lime-Coconut Broth
Ingredients
1/2 cup all-purpose flour
1/2 cup packed brown sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 cup butter, melted
1/2 cup quick-cooking oats
1 (20-ounce) can pineapple tidbits
1/4 cup white sugar
1 tablespoon cornstarch
Directions
Preheat oven to 375 degrees F (190 degrees C).
In a medium bowl, mix together flour, brown sugar, baking powder, and salt. Stir in melted butter and oats until evenly combined.
In a separate bowl, mix together pineapple, white sugar, and cornstarch. Pour pineapple mixture into an 8x8 inch baking dish.
Sprinkle oat mixture over the top of pineapple and spread evenly.
Bake in preheated oven for 25 minutes, or until golden brown.
Serve warm and enjoy!
