Ingredients
- 1 pound mussels (cleaned and de-bearded)

Directions
- In a large pot, heat the olive oil over medium-high heat. Add the ginger and garlic and cook until fragrant, about 1 minute.
- Add the mussels and white wine and cover the pot. Allow the mussels to steam until they open, about 5 minutes.
- Add the coconut milk, lime juice, and cilantro and stir to combine. Bring the mixture to a simmer and season with salt and pepper to taste.
- Serve the mussels in the broth and enjoy!
