Ingredients

  • 1 pound mussels (cleaned and de-bearded)
  • 1 tablespoon olive oil
  • 1 teaspoon fresh ginger (minced)
  • 3 cloves garlic (minced)
  • 1/2 cup white wine
  • 1 cup coconut milk
  • 1/4 cup fresh lime juice
  • 2 tablespoons fresh cilantro (chopped)

Directions

  1. In a large pot, heat the olive oil over medium-high heat. Add the ginger and garlic and cook until fragrant, about 1 minute.
  2. Add the mussels and white wine and cover the pot. Allow the mussels to steam until they open, about 5 minutes.
