Ingredients

  • 1 cup light brown sugar
  • 1 cup white sugar
  • 1 cup butter, softened
  • 4 eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup milk
  • 1 cup raisins
  • 1 cup chopped walnuts
  • 1 cup chopped dates
  • 1/2 cup chopped dried apricots
  • 1/2 cup chopped candied cherries
  • 1/2 cup chopped candied pineapple
  • Confectioners' sugar, for dusting

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan.
  2. In a large bowl, cream together the brown sugar, white sugar, and butter until smooth. Beat in the eggs one at a time, then stir in the flour, baking powder, baking soda, cinnamon, and nutmeg. Add the milk, and beat until creamy. Gently fold in the raisins, walnuts, dates, apricots, cherries, and pineapple.
  3. Pour the batter into the prepared pan, and bake for 45 minutes in the preheated oven, or until a toothpick inserted into the center of the cake comes out clean.
  4. Cool in the pan before dusting with confectioners' sugar, and serving.
