Ingredients

  • 4 ripe tomatoes, chopped
  • 1 ripe avocado, peeled and chopped
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh parsley

Directions

  1. Place the tomatoes, avocado, olive oil, lemon juice, salt, and pepper in a blender or food processor and blend until smooth.
