Ingredients

  • 2 lbs. boneless, skinless chicken breasts
  • 1 can (14 oz.) diced tomatoes with green chilies
  • 1 can (4 oz.) diced chipotle peppers in adobo sauce
  • 2 cloves garlic, minced
  • 1/4 cup brown sugar
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • 1/2 cup cilantro, chopped

Directions

  1. Place the chicken breasts in the slow cooker.
  2. In a medium bowl, combine the diced tomatoes, chipotle peppers, garlic, brown sugar, cumin, and salt and pepper. Mix well.
  3. Pour the mixture over the chicken in the slow cooker.
  4. Cover and cook on low for 4-6 hours, or until the chicken is cooked through.
  5. Before serving, shred the chicken and stir in the cilantro.
  6. Serve over steamed rice with a side salad.
