Ingredients

  • 3 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon curry powder
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon cayenne pepper
  • 4 cups vegetable broth
  • 1 pound carrots, peeled and diced
  • 1/2 cup coconut milk
  • Salt and pepper, to taste

Directions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Add the curry powder, turmeric, ginger, and cayenne pepper to the pot. Cook for 1 minute, stirring constantly.
  3. Add the vegetable broth and carrots to the pot. Bring to a boil, then reduce the heat and simmer for 20 minutes.
  4. Using an immersion blender, blend the soup until smooth. Add the coconut milk and season with salt and pepper to taste.
  5. Serve hot and enjoy!
