Ingredients

  • 1/4 cup maple syrup
  • 1/4 cup freshly squeezed lemon juice
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon crushed red pepper flakes
  • 4 (6-ounce) salmon fillets
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh parsley leaves

Directions

  1. Preheat oven to 375 degrees F.
  2. In a small bowl, whisk together maple syrup, lemon juice, olive oil, garlic, oregano and red pepper flakes.
  3. Place salmon in a single layer onto the prepared baking sheet. Brush salmon with the maple syrup mixture.
  4. Season with salt and pepper, to taste.
  5. Place into oven and bake for 20-25 minutes, or until the fish flakes easily with a fork.
  6. Serve immediately, garnished with parsley, if desired.
