Ingredients
- 1 cup white rice
- 1 cup chicken broth
- 1/2 lb. sausage
- 1/4 cup onion, diced
- 1/4 cup green bell pepper, diced
- 2 cloves garlic, minced
- 1 tablespoon Cajun seasoning
- 1 tablespoon olive oil
- Salt and pepper to taste
Directions
- In a large pot, heat the olive oil over medium heat.
- Add the sausage and cook until browned, about 10 minutes.
- Add the onion, bell pepper, and garlic and cook until softened, about 5 minutes.
- Stir in the Cajun seasoning, salt, and pepper to taste.
- Add the rice and chicken broth and bring to a boil.
- Reduce the heat and simmer, covered, for 20 minutes, or until the liquid is absorbed and the rice is cooked.
- Serve hot.
