Peruvian Cilantro Rice

Ingredients

  • 3 cups long-grain white rice
  • 4 1/2 cups water
  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1/2 cup chopped fresh cilantro
  • Salt and pepper, to taste

Directions

  1. In a medium saucepan, combine the rice and water. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes.
  2. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Add the cooked rice and cilantro to the skillet and season with salt and pepper to taste.
  4. Continue to cook until the cilantro is wilted and the rice is heated through, about 5 minutes.
