Ingredients

  • 1 lb. flank steak
  • 1/4 cup fresh lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 tablespoon olive oil
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1 jalapeno, sliced
  • 6-8 small flour tortillas
  • Salt and pepper to taste

Directions

  1. In a large bowl, mix together the lime juice, garlic, cumin, oregano, and olive oil.
  2. Add the steak to the marinade and let it sit in the refrigerator for at least 1 hour.
  3. Preheat a grill or grill pan to medium-high heat.
  4. Remove the steak from the marinade and season with salt and pepper.
  5. Grill the steak for 4-5 minutes per side, or until cooked to desired doneness.
  6. Remove the steak from the grill and let it rest for 5 minutes before slicing.
  7. Add the bell pepper, onion, and jalapeno to the grill and cook for 2-3 minutes per side, or until lightly charred.
  8. Heat the flour tortillas in a dry skillet over medium heat for 1-2 minutes per side.
  9. Slice the steak into thin strips and serve with the grilled vegetables and warm tortillas.
