Ingredients

  • 1/2 lb. Manicotti shells
  • 1/2 cup chopped onion
  • 1 clove garlic, minced
  • 2 tablespoons olive oil
  • 1 (14.5 oz.) can Italian-style stewed tomatoes, undrained
  • 1 teaspoon dried oregano
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon salt
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup ricotta cheese
  • 1/4 cup grated mozzarella cheese

Directions

  1. Cook manicotti shells according to package directions; drain and let cool.
  2. In a medium saucepan, sauté onion and garlic in oil until tender.
  3. Stir in tomatoes, oregano, pepper, and salt. Simmer, uncovered, for 15 minutes.
  4. Preheat oven to 350°F (175°C).
  5. In a medium bowl, combine Parmesan, ricotta, and mozzarella cheeses. Spoon into manicotti shells.
  6. Pour tomato sauce into a 9-inch by 13-inch baking dish. Arrange filled manicotti shells in dish.
  7. Bake in preheated oven for 20 minutes. Let stand 10 minutes before serving.
