Ingredients
1/2 lb. Manicotti shells
1/2 cup chopped onion
1 clove garlic, minced
2 tablespoons olive oil
1 (14.5 oz.) can Italian-style stewed tomatoes, undrained
1 teaspoon dried oregano
1/4 teaspoon ground black pepper
1/4 teaspoon salt
1/2 cup grated Parmesan cheese
1/2 cup ricotta cheese
1/4 cup grated mozzarella cheese
Directions
Cook manicotti shells according to package directions; drain and let cool.
In a medium saucepan, sauté onion and garlic in oil until tender.
Stir in tomatoes, oregano, pepper, and salt. Simmer, uncovered, for 15 minutes.
Preheat oven to 350°F (175°C).
In a medium bowl, combine Parmesan, ricotta, and mozzarella cheeses. Spoon into manicotti shells.
Pour tomato sauce into a 9-inch by 13-inch baking dish. Arrange filled manicotti shells in dish.
Bake in preheated oven for 20 minutes. Let stand 10 minutes before serving.
