These Jack-o'-Lantern Tea Cakes are perfect for a Halloween party or a fun baking project with the kids. These mini pumpkin-shaped cakes are spiced with cinnamon and nutmeg, and topped with a sweet orange glaze. They are sure to delight both kids and adults alike!

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/4 cup milk
  • Orange food coloring
  • 1 cup powdered sugar
  • 1-2 tablespoons orange juice
  • Green candy sprinkles

Directions

  1. Preheat the oven to 350°F and grease a mini pumpkin-shaped cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.
  3. In a separate bowl, cream the butter and sugar together until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture and mix until well combined.
  5. Gradually add the flour mixture and milk to the wet ingredients, alternating between the two.
  6. Fill each pumpkin cavity in the cake pan with batter and bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the cakes cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
  8. In a small bowl, whisk together the powdered sugar and orange juice until smooth. Add orange food coloring to achieve desired color.
  9. Once the cakes are completely cool, drizzle the glaze over the top of each cake and top with green candy sprinkles for the pumpkin stem.
