This slightly spicy roasted red pepper dip is perfect for any gathering or party. It's easy to make and can be served with vegetables, crackers, or pita chips. The roasted red peppers add a smoky flavor, while the spices give it a nice kick.

Ingredients

  • 2 red bell peppers
  • 1 jalapeno pepper
  • 1 clove of garlic
  • 1/4 cup cream cheese
  • 1/4 cup sour cream
  • 1/4 cup mayonnaise
  • 1/4 tsp cayenne pepper
  • 1/4 tsp smoked paprika
  • Salt and pepper to taste

Directions

  1. Preheat your oven to 400°F.
  2. Wash and dry the red bell peppers and jalapeno pepper. Place them on a baking sheet and roast in the oven for about 20-25 minutes, until the skins are charred.
  3. Remove the peppers from the oven and place them in a bowl. Cover the bowl with plastic wrap and let them steam for 10 minutes.
  4. Peel the skins off the peppers and remove the seeds and stems. Chop the peppers into small pieces.
  5. In a food processor, combine the roasted peppers, garlic, cream cheese, sour cream, mayonnaise, cayenne pepper, smoked paprika, salt, and pepper. Blend until smooth.
  6. Taste the dip and adjust the seasonings if needed.
  7. Transfer the dip to a serving bowl and chill in the refrigerator for at least 1 hour before serving.
