Ingredients

  • 1 cup quinoa, cooked
  • 1 can black beans, drained and rinsed
  • 2 bell peppers, diced
  • 1/4 cup diced red onion
  • 1 jalapeño, diced
  • 1/4 cup chopped cilantro
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Directions

  1. In a large bowl, combine the quinoa, beans, bell peppers, red onion, jalapeño, and cilantro.
