Grilled Mediterranean Vegetable Sandwich

Ingredients

  • 1 large red bell pepper, halved and seeded
  • 1 large zucchini, cut into 1/2-inch slices
  • 1 small red onion, cut into 1/2-inch slices
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 4 slices whole-grain bread
  • 2 tablespoons pesto
  • 1/2 cup shredded mozzarella cheese

Directions

  1. Heat grill to medium-high heat.
  2. In a large bowl, combine bell pepper, zucchini, onion, garlic, olive oil, oregano, basil, salt and pepper.
  3. Grill vegetables until tender and lightly charred, about 5 minutes per side.
  4. Spread pesto onto each slice of bread.
  5. Top two slices of bread with grilled vegetables, mozzarella cheese, and remaining two slices of bread.
  6. Grill sandwiches until golden brown and cheese is melted, about 3 minutes per side.
  7. Serve sandwiches warm.
