1 lb. Lamb, cubed
1 Onion, finely chopped
3 Carrots, chopped
3 cloves Garlic, minced
1 cup Rice, uncooked

2 cups Water
Directions
In a large pot, heat the olive oil over medium heat.
Add the lamb and cook until it is browned.
Add the onion, carrots, garlic, and spices, and cook until the vegetables are softened.
Add the rice and stir to combine.
Add the water and bring to a boil.
Reduce the heat and simmer, covered, for 20-25 minutes or until the rice is cooked and all the liquid has been absorbed.
Serve hot.
