Ingredients

  • 3/4 cup all-purpose flour
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 large eggs, separated
  • 3/4 cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon cream of tartar
  • Confectioners' sugar, for dusting

Directions

  1. Preheat oven to 350 degrees F.
  2. In a medium bowl, sift together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat the egg whites with an electric mixer on high speed until soft peaks form. Gradually add the sugar and beat until stiff peaks form.
  4. In a separate bowl, beat the egg yolks with the vanilla until light and fluffy.
  5. Fold the egg yolk mixture into the egg white mixture. Add the flour mixture and fold until just combined.
  6. Line a baking sheet with parchment paper. Using a piping bag, pipe the batter into finger-shaped lengths about 3 inches long, spacing them about an inch apart. Sprinkle with cream of tartar.
  7. Bake for 15 minutes, or until golden brown. Let cool completely before dusting with confectioners' sugar.
