Ingredients

  • 1 package extra-firm tofu
  • 1/4 cup soy sauce
  • 1 Tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/4 teaspoon ground black pepper
  • 4 slices sourdough bread
  • 1/4 cup vegan mayonnaise
  • 1/2 cup spinach, chopped
  • 1 tomato, sliced

Directions

  1. Press the tofu between paper towels to remove excess moisture. Cut into 1/2-inch slices.
  2. In a shallow bowl, combine soy sauce, olive oil, garlic, and black pepper. Add the tofu slices and let it marinate for 10 minutes.
  3. Preheat a skillet over medium-high heat. Grill the tofu for 3-4 minutes per side, until lightly browned.
  4. Spread vegan mayonnaise on the sourdough bread slices. Top with grilled tofu, spinach, and tomato slices.
  5. Serve immediately.
