Ingredients
- 1 package extra-firm tofu
- 1/4 cup soy sauce
- 1 Tablespoon olive oil
- 2 cloves garlic, minced
- 1/4 teaspoon ground black pepper
- 4 slices sourdough bread
- 1/4 cup vegan mayonnaise
- 1/2 cup spinach, chopped
- 1 tomato, sliced
Directions
- Press the tofu between paper towels to remove excess moisture. Cut into 1/2-inch slices.
- In a shallow bowl, combine soy sauce, olive oil, garlic, and black pepper. Add the tofu slices and let it marinate for 10 minutes.
- Preheat a skillet over medium-high heat. Grill the tofu for 3-4 minutes per side, until lightly browned.
- Spread vegan mayonnaise on the sourdough bread slices. Top with grilled tofu, spinach, and tomato slices.
- Serve immediately.
