Ingredients
1 package extra-firm tofu
1/4 cup soy sauce
1 Tablespoon olive oil
2 cloves garlic, minced

1 tomato, sliced
Directions
Press the tofu between paper towels to remove excess moisture. Cut into 1/2-inch slices.
In a shallow bowl, combine soy sauce, olive oil, garlic, and black pepper. Add the tofu slices and let it marinate for 10 minutes.
Preheat a skillet over medium-high heat. Grill the tofu for 3-4 minutes per side, until lightly browned.
Spread vegan mayonnaise on the sourdough bread slices. Top with grilled tofu, spinach, and tomato slices.
Serve immediately.
