Ingredients
- 2 tablespoons extra-virgin olive oil
- 2 large potatoes, peeled and thinly sliced
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
- 1 cup shredded cheddar cheese
- 1/2 cup cooked and crumbled bacon
- 1/4 cup chopped fresh chives
- Sour cream, for serving
Directions
- Preheat oven to 400 degrees F.
- In a large bowl, combine olive oil, potatoes, garlic powder, onion powder, smoked paprika, salt, and pepper. Toss to coat.
- Spread potato slices in an even layer on a large baking sheet. Bake in preheated oven for 20 minutes, flipping potatoes halfway through.
- Sprinkle cheese and bacon over potatoes. Bake for an additional 5 minutes, or until cheese is melted and potatoes are golden brown.
- Sprinkle chives over potatoes. Serve with sour cream, if desired.
