Ingredients

  • 1 cup cooked white rice, cooled
  • 2 tablespoons butter
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1/2 cup diced ham (or other cooked meat)
  • 1/4 cup frozen peas and carrots
  • 1/4 cup ketchup
  • 2 eggs
  • Salt and pepper, to taste
  • Parsley, for garnish

Directions

  1. In a large skillet over medium-high heat, melt butter. Add the onion, bell pepper, ham, and frozen peas and carrots. Sauté for 5 minutes, or until vegetables are tender.
  2. Add the cooked rice and ketchup. Stir to combine and cook for 2-3 minutes, or until heated through.
  3. Make two omelettes: in a small bowl, whisk together eggs, salt and pepper. Heat a small non-stick skillet over medium-low heat. Pour in half of the egg mixture, swirling the pan to evenly distribute the egg. Cook for 1-2 minutes, or until the egg is set. Flip and cook for another minute. Repeat with the remaining egg mixture.
  4. Place 1/2 cup of the fried rice onto each omelette. Fold the omelette over the filling, tucking the ends in. Garnish with parsley, if desired.
