In a large skillet over medium-high heat, melt butter. Add the onion, bell pepper, ham, and frozen peas and carrots. Sauté for 5 minutes, or until vegetables are tender.
Add the cooked rice and ketchup. Stir to combine and cook for 2-3 minutes, or until heated through.
Make two omelettes: in a small bowl, whisk together eggs, salt and pepper. Heat a small non-stick skillet over medium-low heat. Pour in half of the egg mixture, swirling the pan to evenly distribute the egg. Cook for 1-2 minutes, or until the egg is set. Flip and cook for another minute. Repeat with the remaining egg mixture.
Place 1/2 cup of the fried rice onto each omelette. Fold the omelette over the filling, tucking the ends in. Garnish with parsley, if desired.
