Peach-Jalapeno Barbeque Sauce
Ingredients
1 cup quinoa
2 tablespoons olive oil
1 teaspoon cumin seeds
1 onion, chopped
1 teaspoon garlic, minced
1 teaspoon ginger, minced
2 green chilies, chopped
1/4 teaspoon turmeric powder
1/2 teaspoon garam masala
1/4 teaspoon red chili powder
1/4 cup frozen peas
1/4 cup frozen corn
2 cups baby spinach leaves, chopped
2 tablespoons cilantro, chopped
1/4 cup roasted cashews
Salt, to taste
Directions
In a large pot, heat the olive oil over medium heat.
Add the cumin seeds and sauté for 30 seconds.
Add the chopped onion, garlic, ginger and green chilies and cook for 5 minutes, until the onion is softened.
Add the turmeric powder, garam masala and red chili powder and cook for 30 seconds.
Add the quinoa and stir to combine.
Add 2 cups of water, cover and bring to a boil.
Reduce the heat to low and simmer for 15 minutes, until the quinoa is cooked through.
Add the frozen peas and corn and cook for 5 minutes.
Add the chopped spinach and cilantro and cook for 5 minutes.
Add the roasted cashews, stir to combine and season with salt, to taste.
Serve hot.
