Spicy Quinoa and Spinach Pulao Pilaf

Ingredients

  • 1 cup quinoa
  • 2 tablespoons olive oil
  • 1 teaspoon cumin seeds
  • 1 onion, chopped
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • 2 green chilies, chopped
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon garam masala
  • 1/4 teaspoon red chili powder
  • 1/4 cup frozen peas
  • 1/4 cup frozen corn
  • 2 cups baby spinach leaves, chopped
  • 2 tablespoons cilantro, chopped
  • 1/4 cup roasted cashews
  • Salt, to taste

Directions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the cumin seeds and sauté for 30 seconds.
  3. Add the chopped onion, garlic, ginger and green chilies and cook for 5 minutes, until the onion is softened.
  4. Add the turmeric powder, garam masala and red chili powder and cook for 30 seconds.
  5. Add the quinoa and stir to combine.
  6. Add 2 cups of water, cover and bring to a boil.
  7. Reduce the heat to low and simmer for 15 minutes, until the quinoa is cooked through.
  8. Add the frozen peas and corn and cook for 5 minutes.
  9. Add the chopped spinach and cilantro and cook for 5 minutes.
  10. Add the roasted cashews, stir to combine and season with salt, to taste.
  11. Serve hot.
