1 lb. boneless skinless chicken breasts, cut into 1-inch cubes
1/4 cup creamy peanut butter
2 tablespoons soy sauce
2 cloves garlic, minced
1 tablespoon chili-garlic sauce
1 tablespoon honey
1 tablespoon vegetable oil
Salt and pepper, to taste

Directions
In a medium bowl, whisk together the peanut butter, soy sauce, garlic, chili-garlic sauce, and honey until smooth.
Add the chicken and toss to coat. Cover and let marinate in the refrigerator for at least 30 minutes, or up to overnight.
Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 8 minutes. Season with salt and pepper, to taste.
Serve the spicy peanut chicken over white rice or noodles, garnished with chopped peanuts and fresh cilantro, if desired.
